Jenny's orange cake recipe

This is the first post in the networking for well-being blog.  

It includes Jenny's recipe for orange cake - it is possible to follow the link - or maybe it is easier to see it here:

Orange Cake recipe NZ (1975) 

Put in a blender

½ cup of  oil  ( or butter) 

1 cup raw sugar 

2 eggs or 

... Jenny used used3 tbsp of ground Linseed/Flaxseed 

... and stirred in 9 tbsp of  water, 

... and mixed together until it thickens a little

1 tsp baking soda

1 whole orange ( use skin and cut up into small pieces for blender)

1 cup raisins or sultanas

 ¾ cup soya or oat milk 

½ cup of walnuts ( optional)

Blend together and then

Add 1 ¾  cup of flour ( mixture of plain and wholemeal)

Grease a bundt pan  - makes cake with hole in middle. 

Cook ¾ hour at 160 C

A soft moist cake

by her mother in-law Margot.

  1. Nice to see Jenny's receipee. Any idea how it might be cooked in a microwave? She mentioned use the sort of cake 'tin' with a hole in the middle, but that is all I remember.
